Baltic Porter

Smooth but stong Porter with Lager yeast. Attempt at a Baltika 6 clone.

Alcohol: 7.4% v/v (5.8% w/w)
Grain: 6 lb. American 2-row
8 oz. American crystal 60L
8 oz. Special B
6 oz. American chocolate
6 oz. Carafa Special II
4 lb. Belgian Munich
Mash: 70% efficiency
150F for 5 hrs (longer than planned - had to leave unattended while out doing errands)
Boil: 70 minutes SG 1.058 5.4 gallons
6 oz. Molasses
IM at 15 min
Hops: .5 oz. Fuggles (4.6% AA, 60 min.)
.25 oz. Magnum (13.2% AA, 60 min.)
.5 oz. Santiam (6.5% AA, 30 min.)
Yeast: S-23 cake from an O'fest.
Log: Reusing S-23 dry lager yeast. Second time using. Seemed to work well with Baltic style. Fermented at 50F for 2 weeks, secondary at 40F for 4 weeks, lagered at 38F for 6 weeks.
Carbonation: medium carbonation
Tasting: Big chocolate aroma and flavor. Only hints of dark fruits (which is more to style) of raisins coaxed out. No yeast derived esters (that S-23 supposed to produce) and no diacetyl. Nice dark brown color and tan head. Medium body and no alcohol hotness - smooth - though it does warm you up. Could actually pass as a Schwarzbier since the roast is not harsh in any way and it does not have the alcohol bite that you see in commercial brands (that I didn't want, so success!), Baltika seeming to be the smoothest. A nice sipper. Look forward to sampling a bottle in 6+ months to see how it ages.
