Apple Jack

I'm doing my boil tonight so this is largely in the experimental stage. I plan to use a leftover packet of Munton's ale yeast and I'm going for a cider that more resembles an ale, if that makes any sense. My 86 year old neighbor told me once that his coal-mining, moonshining, immigrant Daddy used to make apple beer that was called "Apple Jack". I've always wondered what it was like, so I decided to finally start toying with a recipe.
As you can see, there are no additions of hops and no irish moss, so I suppose it will be cidery and hazy. I want stronger carbonation than traditional ciders and I'm adding the oats to help with head retention and a little cereal flavor.

Beer: Apple Jack Style: Strong Cider-Ale
Type: Extract w/grain Size: 5 gallons
Color:
15 HCU (~10 SRM)
Bitterness: 0 IBU
OG: 1.110 FG: 1.025
Alcohol: 11.0% v/v (8.6% w/w)
Water: Good clean Louisville tap-water, (often touted as the highest quality municiple water supply in America).
Grain: 8 oz. Rolled oats
Steep: I'm just going to add it to the cold cider. No bag or anything.
Boil: 30 or 40 minutes SG 1.184 3 gallons
1 lb. Brown sugar
20 lb. Pasteurized Unsweetened Cider
In place of hops I'll add .5 ozs cinnamon, .5 ozs nutmeg, .25 ozs cloves and .25 ozs ginger. Of course, this is just my estimate of what is needed to impart some subtle flavors. I may have to add more to the secondary when I transfer it, or perhaps some liquid flavoring.
Hops: .5 oz. Cinnamon (15 min.)
.5 oz. Nutmeg (15 min.)
.25 oz. Cloves (15 min.)
.25 oz. Ginger (15 min.)
Yeast: Munton's dry yeast packet. I usually proof it with some luke warm wort or boiled corn sugar-water prior to pitching it.

I figure I'll be ready to bottle within 12 days. It will probably be another month before I open one to try it. If anyone tries this recipe or toys with it, e-mail and let me know what changes you recommend.
Carbonation: 2.2 volumes Honey: 3.93 oz. for 5 gallons @ 65°F
I entered honey as my priming sugar, but I saw a cider recipe on this site that used canned frozen apple juice concentrate to prime. I may try half of my batch with that just to see the difference.
