Bitterness: 46 IBU
OG: 1.111 FG: 1.024
Alcohol: 11.3% v/v (8.9% w/w)
Water: Filtered through a Brita.
Grain: 4 oz. American 2-row
8 oz. American crystal 120L
8 oz. Belgian Special B
8 oz. Belgian chocolate
8 oz. British black patent
1.5 lb. Roasted barley
Steep: Steep grains at 155 degrees for 30 minutes
Boil: 60 minutes SG 1.223 2.5 gallons
9 lb. Dark dry malt extract
1 lb. Belgian candi sugar
1 lb. Cane sugar
.5 lb. Molasses
Add 1tsp of Irish Moss @ 30 minutes left in the boil.
Hops: 2 oz. Summit (18.9% AA, 60 min.)
1 oz. Galena (13% AA, 60 min.)
2 oz. Saaz (3.75% AA, 45 min.)
1 oz. Kent Goldings (5% AA, 30 min.)
1 oz. Saaz (3.75% AA, 15 min.)
1 oz. Kent Goldings (aroma)
Yeast: Wyeast 1762: Belgian Abby Ale II
Temperature range: 65-75 degrees
Alcohol tolerance: 12%
Log: Put oak chips in the secondary and 1 inch of split vanilla bean is optional.
