Alcohol: 5.5% v/v (4.3% w/w)
Water: gypsum? not sure
Grain: 500g Dextrine malt (Cara-Pils)
1.5kg British crystal 50-60L
Steep: TBD - 150degF for 40 min?
Boil: 65 minutes SG 1.145 2 gallons
2.5kg Wheat extract
500g Maple syrup
Irish Moss
Hops: 30g Hallertauer Hersbrucker (3.8% AA, 60 min.)
30g Hallertauer Hersbrucker (3.8% AA, 50 min.)
25g Hallertauer Hersbrucker (3.8% AA, 40 min.)
25g Hallertauer Hersbrucker (3.8% AA, 30 min.)
Yeast: Bavarian Yeast Blend
Carbonation: priming with Wheat-DME
Tasting: shooting for semi-sweet - no aromatic hops - want all the maple aroma to come through at the pour - bitterness only to balance the sweetness - a little stronger alc. level for winter. Brewing Nov 12 or 14. shooting to bottle around Dec 15 - Ready to drink Jan 15 - or so...
