Great tasting Brown Ale with a very nice finish. Recipe created around our fresh home grown hops!

Type: All grain Size: 5 gallons
Color:
89 HCU (~32 SRM)
Bitterness: 47 IBU
OG: 1.066 FG: 1.012
Alcohol: 7.0% v/v (5.5% w/w)
Water: Tacoma water - nothing added, nothing needed.
Mash with 3.5 gallons, sparge with 5 gallons (stop when 6 gallons captured)
Grain: 10 lb. American 2-row
.75 lb. British brown
.75 lb. British crystal 135-165L
.75 lb. American chocolate
Mash: 75% efficiency
Infusion mash 154° for 60 minutes, mash out 168° for 15 minutes.
Boil: 60 minutes SG 1.055 6 gallons
Hops: 1 oz. Northern Brewer (8.5% AA, 60 min.)
1 oz. Mt. Hood (4.5% AA, 30 min.)
1 oz. Mt. Hood (4.5% AA, 15 min.)
Yeast: Recaptured English Ale 007
Log: Fermented 2 weeks (V-vessel), stored outside 2 days to allow yeast to settle out (outside temperatures are below 50°)
Carbonation: Beer gas (nitro / CO2) 35 lbs, served with 10 lbs CO2 (or on Nitro tap)
Tasting: Easy drinking with a nice subtle smokey finish. Much more robust than Brown Ales like New Castle.
