Charlie's Revolutionary Nut Brown

Very loosely adapted from Northern Brewer's nut brown ale kit

Type: All grain Size: 5.25 gallons
Color:
35 HCU (~17 SRM)
Bitterness: 40 IBU
OG: 1.056 FG: 1.012
Alcohol: 5.7% v/v (4.5% w/w)
Water: 1 tsp 5 Star 5.2 mash stabilizer added to strike water
Grain: 10 lb. British pale
.25 lb. Special Roast
.25 lb. Biscuit
.5 lb. Crystal 65L
.25 lb. British chocolate
Mash: 70% efficiency
Mashed at 153°F for 75 minutes. 1.5 quart/ lb of grain (4.22 gallons strike water). Stirred once every 15 minutes
Fly Sparged with 4.6 gallons at 170°F for 50 minutes. Add the 20 minute hop addition during the sparge runoff, not during the boil
Boil: 60 minutes SG 1.044 6.75 gallons
Hops: .5 oz. Nugget (10% AA, 60 min.)
1.5 oz. Willamette (5.5% AA, 20 min.)
1.5 oz. Willamette (5.5% AA, 5 min.)
Yeast: WYeast 1028 Activator smack pack used for this batch. No starter, and it still kicked off in 4 hours. Nottingham dry yeast or S-04 would make suitable substitutes.
Log: Brewed 8-30-08, bottled 9-11-08
Carbonation: 2/3 cups Dextrose
Tasting: First taste on 9/20. Nice, malty nut brown ale.
