Mash: 80% efficiency
Mash start at 152° down to 143° overnight then increase to 168° for sparge at 168° H2O
Boil: 90 minutes SG 1.063 14 gallons
Irish moss last 10 min. 2 tsp. Burton's H2) treatment
Hops: 1 oz. Perle (7.4% AA, 90 min.)
1 oz. NZ Green Bullet (13.3% AA, 60 min.)
1 oz. Perle (7.4% AA, 30 min.)
2 oz. Riwaka (6.5% AA, 15 min.)
Yeast: Wyeast Pacman Rogue's Ale yeast 48 oz. starter
Log: Brewed and pitched on 9-1-08 ferment at 74°
Carbonation: Forced CO2 at 40 lbs. in cornelius kegs
