Skolbock

Bock based on Coopers Pilsner kit (listed as 1.7 kgs of the LME), IBU contribution of kit calculated and adjusted in spreadsheet.

29 HCU (~15 SRM)
Bitterness: 25 IBU
OG: 1.070 FG: 1.020
Alcohol: 6.5% v/v (5.1% w/w)
Water: Boiled tap water only used.
Boil: 60 mins minutes SG 1.179 9 liters
3.2kg Light malt extract
1.5kg Dark malt extract
500g Wheat extract
All extracts boiled in 9 litre pot with saaz hops as listed.
Hops: 60g Pilsner kit contribution (8.5% AA, 60 min.)
15g Saaz (3.75% AA, 45 min.)
46g Pilsner kit contribution (8.5% AA, 30 min.)
15g Saaz (3.75% AA, 15 min.)
Yeast: Saflager yeast.
Log: Kept for 2 weeks in the fermentor, then bulk primed, regridgerated at 4°C for 4 weeks, left at room temperature for 2 weeks to prime.
Carbonation: 2.2 volumes Cane Sugar: 122g for 23 liters @ 20°C
Dextrose used instead of cane sugar.
Tasting: This beer was a cracker. Sweet, strong, dark malty goodness after 2 weeks of priming, can only get better. Planned to swap 6 longnecks for some home preserved olives a friend gave me, but it's so good might have to rethink that.
