Portly Porter III

This is my third (fourth?) variation on this extremely drinkable ale. A very dark ale, with a very complex blend of flavors. If you enjoy a dark beer then you will enjoy this! Even people who aren't fond of dark beers in general enjoy it.... one reason why I can't seem to keep many bottles around for long.

Beer: Portly Porter III Style: Robust Porter
Type: Extract w/grain Size: 6 gallons
Color:
116 HCU (~39 SRM)
Bitterness: 23 IBU
OG: 1.068 FG: 1.012
Alcohol: 7.2% v/v (5.6% w/w)
Water: Added 1 tsp Gypsum for last 15 minutes of boil.
Grain: .5 lb. Simpsons Extra Dk crystal 155-165L
.5 lb. Crisp chocolate 625 - 635L
Steep: Steeped grains in grain for 20 minutes @ approx. 140° F. Sparged with 1/2 gallon hot water.
Boil: 60 minutes SG 1.135 3 gallons
3.3 lb. Dark UH Munton's malt extract
1 lb. Munton's Light dry malt extract
3 lb. Munton's Dark dry malt extract
2 lb. Brown sugar
Added 1 tsp Irish Moss for last 15 minutes of boil.
Hops: 1 oz. Chinook (10.7% AA, 60 min.)
1 oz. Kent Goldings (5% AA, 45 min.)
Yeast: 23 grams Safale S-04 Dried Ale yeast, 11.5 grams started in 4 oz. water and the remainder sprinkled over top of wort.
Log: To primary fermenter 3-28-2003 2:30 pm. Poured wort over 8 lbs, of ice to bring temperature down rapidly. Was able to pitch yeast immediately.
