Vicarious Imperial Stout

This is my second attempt at replicating Sweetwater Brewing's Happy Ending. The gist of the recipe is that I took my LHBS' Imperial Stout recipe and substituted the hopping schedule of a Double IPA.

Type: Extract w/grain Size: 5.25 gallons
Color:
131 HCU (~42 SRM)
Bitterness: 71 IBU
OG: 1.078 FG: 1.016
Alcohol: 8.0% v/v (6.3% w/w)
Water: Used Poland Springs bottled water.
Grain: 8 oz. British pale
8 oz. American crystal 60L
8 oz. American chocolate
4 oz. Chocolate Wheat
6 oz. Roasted barley
Steep: Steep @ 160F for 30 minutes in 3QT water.
Sparge with 1QT @ 170F
Boil: 75 minutes SG 1.118 3.5 gallons
5 lb. Amber malt extract
2 lb. Dark malt extract
3 lb. Light malt extract
5 oz. Light dry malt extract
Irish Moss 15 min before end.
Hops: 1 oz. Summit (16.5% AA, 75 min.)
2 oz. Centennial (9.1% AA, 30 min.)
2 oz. Cascade (6.8% AA, 15 min.)
2 oz. Cascade (6.8% AA, 5 min.)
1 oz. Cascade (aroma)
Yeast: Wyeast Propogator Scottish Ale
2L of water with 200g of Light LME for the starter 24h before brewing.
