wedding ale 2

2nd version of a belgian pale ale for our wedding. Something that most folks will like but with a bit of flair. Doing a double mash-extract batch to yield 10 gallons. could cut specialty grains in half and bring malt total up to 12 lbs with base malt to make all grain version.

Bitterness: 25 IBU
OG: 1.061 FG: 1.010
Alcohol: 6.6% v/v (5.2% w/w)
Water: gypsum added to mash
Grain: 8 lb. British pale
1 lb. Wheat malt
1 lb. Belgian biscuit
1 lb. Dextrine malt (Cara-Pils)
1 lb. Belgian CaraMunich
.5 lb. Belgian Special B
Mash: 75% efficiency
infusion mash
Boil: 90 minutes SG 1.102 6 gallons
6 lb. Light dry malt extract
irish moss to boil
Hops: 3.14 oz. Fuggles (4.75% AA, 90 min.)
1.57 oz. Mt. Hood (4.5% AA, 30 min.)
0.79 oz. Mt. Hood (4.5% AA, 15 min.)
.5 oz. Mt. Hood (aroma)
Yeast: wyeast Abbey II, 1/2 gal starter split betweeen 2 fermenters
Carbonation: carbonate in a keg with 3/4 cup priming sugar.
