Midnight Lager

2cnd attempt at cloning Sam Adams Black Lager, very close! Maybe a bit more Munich and a little roasted barley!

Bitterness: 22 IBU
OG: 1.049 FG: 1.010
Alcohol: 5.0% v/v (3.9% w/w)
Water: Filtered
Grain: 1 lb. German Munich
1 lb. Crystal 60L
8 oz. CaraPils
2 oz. Chocolate
3 oz. Carafa III dehusked
Mash: 58% efficiency
1.3 qts per lb, 153 deg target, for 60 min
Boil: 75 minutes SG 1.087 1.75 gallons
2 lb. Light malt extract
8 oz. Brown sugar
1.25C = 8oz brown sugar
Hops: .33 oz. Hallertauer Mittelfruh (5% AA, 60 min.)
.5 oz. Spalt (6.75% AA, 45 min.)
.33 oz. Hallertauer Mittelfruh (5% AA, 5 min.)
Yeast: S-23 Saflager.
Washed from previous Pilsner batch, as a test. Kicked off in 3 hours!
Log: Brew 4/20/08
58% mash efficiency due to low enzymes, maybe add Pils to increase this.
Late add of extract and brown sugar, last 15 min, gives IBU = +30
Bottle 5/4/08
Carbonation: 2.6 volumes Corn Sugar: 2.84 oz. for 3 gallons @ 70°F
Used 8 Tbls corn sugar.
Still low after 3 weeks.
Tasting: Tasted 5/29/08 - Very good!
Pours 1/4" tan head, but no retention, nice flavor, very clean.
Next try I will add more Munich, a little Pils, and a wee bit of Roast. Very good at 3 weeks, will only get better!!
