Celebration Ale Clone

This is a Sierra Nevada Celebration Ale clone. It is a red hoppy ale, and is one of my favorites!

Type: Extract w/grain Size: 5 gallons

54 HCU (~23 SRM)
Bitterness: 71 IBU
OG: 1.072 FG: 1.016
Alcohol: 7.3% v/v (5.7% w/w)
Grain: 4 oz. American victory
1 lb. American crystal 40L
12 oz. American crystal 60L
8 oz. Dextrine malt (Cara-Pils)
4 oz. Roasted barley
Steep: Steep grains until boil.
Boil: 60 minutes SG 1.104 3.5 gallons
6 lb. 6 oz. Light malt extract
2 lb. Light dry malt extract
Hops: 2 oz. Columbus (12.2.% AA, 60 min.)
1.5 oz. Willamette (3.8% AA, 30 min.)
1 oz. Cascade (6.3% AA, 5 min.)
Yeast: White Labs WLP 001 California.

03/23/08 Second fermentation & adding of 1.5 oz of Cascade Hops(dry)
04/06/08 Bottled 49 12 oz bottles
Actual OG was 1070, FG was 1020 or ABV of 6.6% 241 calories
No blowoff system necessary.
Carbonation: 5 oz priming sugar.
Tasting: Very good, but the Columbus hops I had to use impart a different taste than the Norther Brewer hops I normally use. Damn hop shortage!
