Raspberry Malt Mead

Malted mead brewed with 13 lbs of raspberries

Type: Extract w/grain Size: 5 gallons
Color:
33 HCU (~16 SRM)
Bitterness: 0 IBU
OG: 1.128 FG: 1.020
Alcohol: 13.9% v/v (10.9% w/w)
Grain: 10 oz. Belgian CaraMunich
7 oz. Belgian Special B
Steep: Steeped grain in 1.5 gallons of water at 140°F for 1 hour.
Boil: 15 minutes SG 1.426 1.5 gallons
12 lb. Honey
3.3 lb. Light malt extract
2 tbs yeast nutrient and 1/2 tsp Irish moss added to boil.
Malt extract was added to steeping water prior to boiling.

Honey was added once the pot was removed from heat.
13 lbs of raspberries were crushed and added once the wort had cooled.
Hops:
Yeast: Red Star Champagne yeast
Log: Started on 8/13/07, it spent 2 weeks in the primary and spent 6 months in secondary.
.5 oz dark toasted American oak chips were added to the secondary after the first 3 months.
Carbonation: No carbonation, served flat
Tasting: Very nicely balanced, the closest beer i've had is Dogfishhead's Raspberry Fort.
