Bella's Sedona Ale

This is actually a "Rouge - Dead Guy Ale" knock-off but a little more red...which I was trying to achive.

Type: Extract w/grain Size: 5.5 gallons
Color:
24 HCU (~13 SRM)
Bitterness: 16 IBU
OG: 1.063 FG: 1.016
Alcohol: 6.1% v/v (4.8% w/w)
Water: Bottled Spring Water 7 Gallons...figure at least 1 gallon evaporation
Grain: .5 lb. German Munich
.75 lb. American crystal 40L
.75 lb. Belgian CaraMunich
Steep: Steep @ 155° for 30mins
Sprage with 1/2 gallon @ 165°
Boil: 60 minutes SG 1.116 3 gallons
5 lb. Light malt extract
3 lb. Xtra Light dry malt extract
Irish Moss @ 15 mins.
Hops: 1.0 oz. Perle (7.9% AA, 60 min.)
.25 oz. Perle (7.9% AA, 30 min.)
.25 oz. Saaz (3.6% AA, 15 min.)
.25 oz. Perle (aroma)
.25 oz. Saaz (aroma)
Yeast: Using "PACMAN" Wyeast...if not available try California 5 (White Labs) or 1056 American Ale (Wyeast)
Carbonation: 2.7 volumes Keg: 14.4 psi @ 40°F
