Biere de Garde

Amber style BdG dangerously drinkable. You must "garde" it though to get to peak flavor.

18 HCU (~11 SRM)
Bitterness: 24 IBU
OG: 1.069 FG: 1.014
Alcohol: 7.1% v/v (5.6% w/w)
Water: soft water
Grain: 4 lb. Belgian Pilsner
3 lb. German Vienna
3 lb. German Munich
8 oz. Belgian aromatic
4 oz. Belgian CaraVienne
2 oz. Belgian Special B
Mash: 76% efficiency
152F for 60 minutes. Batch sparge with 3 gallons for 60 min. added 1.2 gallons to raise to 168F, drained then added 3 more gallons at 168F, mixed and let sit for 10 min. then drained again to collect 6 gallons.
Boil: 60 minutes SG 1.058 6 gallons
8 oz. Light dry malt extract
8 oz. Corn sugar
IM at 15 min. Added extra sugar at beginning of boil.
Hops: 8.5g Magnum (13.6% AA, 60 min.)
28.4g Spalt (3.5% AA, 30 min.)
Yeast: WL029 German Ale yeast - leads to clean profile
Log: 21 day primary @ 62F then 3 weeks at 38F.
Carbonation: Medium carbonation - bottle conditioned
Tasting: After 3-4 weeks in bottle, it was very hot and fusel-ly. Left alone for 2 more months and mellowed wonderfully and hitting peak at 5 months. Malty and a little toasty w/ some raisin ester notes - very smooth tasting. Clean from using WL029 yeast - not "cellar-like" as guidelines call for but most of the commercial examples (Jenlain in particular) I've tasted are fairly clean of which this is quite comparible. Will make again
