Bitterness: 21 IBU
OG: 1.055 FG: 1.013
Alcohol: 5.5% v/v (4.3% w/w)
Water: Spring Water
Grain: 1 lb. Flaked wheat
Steep: Steeped the flaked wheat at 150°F for 30 minutes
Boil: 60 minutes SG 1.064 4.5 gallons
3.3 lb. Light malt extract
1 lb. Light dry malt extract
2 lb. Wheat extract
.8 lb. Honey
Added the Orange Blossom Honey just before flameout. Added one cup Wheat DME at the start of the boil and remaining extract just after flameout.
Hops: 1 oz. Tettnanger (4.5% AA, 60 min.)
1 oz. Tettnanger (4.5% AA, 20 min.)
Yeast: White Labs WLP320 American Hefeweizen yeast
Log: Fermented in the primary at 66°F for 8 days, racked to secondary. Wort bubbled well through 8 days. Secondary fermenting for another 10 days.
