JPK'S XSIS

I made this beer for my favorite storm king, JPK. Is JPK'S Extra Special Imperial Stout.

Type: Extract w/grain Size: 5 gallons
Color:
251 HCU
Bitterness: 48 IBU
OG: 1.068 FG: 1.045
Alcohol: 2.9% v/v (2.3% w/w)
Water: I like to use spring water. I just get it from the grocery store.
Grain: 1 lb. American crystal 120L
1 lb. British black patent
1 lb. Roasted barley
Steep: Steep the grains for in a grain bag, using it like a tea bag.....
Boil: 60 minutes SG 1.136 2 1/2 gallons
7 lb. Light malt extract
1 lb. Dark dry malt extract
3.3 lb. Dark malt extract
I always use Irish Moss in the last 15 mins of the boil.
Hops: 2 oz. Cascade (6% AA, 60 min.)
2 oz. Cluster (7% AA, 60 min.)
2 oz. Saaz (3.75% AA, 15 min.)
Yeast: White Labs Dry English Ale Yeast WLP007
Log: I added a pound of frozen dark sweet cherries to the wort, just because. I bottled yesterday, hopefully it will turn out good. I brewed on 3/3/08, racked into secondary on 3/17/08, bottled on 4/16/08.
Carbonation: 1/2 cup of brown sugar
Tasting: I want to try and carbonate with sugar in the raw someday. Maybe next time I make this beer, if it turns out to be delicious.
