La Maudite Eyebrow

Almost a Unibroue Maudite clone.

Type: All grain Size: 5.5 gallons
Color:
24 HCU (~13 SRM)
Bitterness: 23 IBU
OG: 1.071 FG: 1.014
Alcohol: 7.3% v/v (5.7% w/w)
Water: 1 tsp Gypsum in the mash and in the sparge
Grain: 6 lb. Belgian Pilsner
4 lb. Belgian Munich
.25 lb. Belgian Special B
.25 lb. Crystal 70L
2 lb. Raw wheat
Mash: 75% efficiency
Mash 70 minutes @ 150 F
(Some prefer longer at higher temps up to 156 F depending on body/alcohol preferences)
Boil: 80 minutes SG 1.056 7 gallons
1 lb. Brown sugar
Boil the first 20 min with the Brown Sugar & no hops
Then follow bittering schedule
Hops: 1 oz. Tettnanger (5.7% AA, 60 min.)
.5 oz. Hallertauer Hersbrucker (5% AA, 20 min.)
Yeast: WLP 500 Trappist Ale or
Wyeast 3864
Aerate EXTREMELY well.
Ferment 72 F. Hotter if you prefer more of the Monk Funk.
Log: Rack to secondary. Condition longer than usual.
Carbonation: Save some and bottle condition for 1 year for a treat.
Otherwise, keg and force carbonate for instant pleasure.
Tasting: Add an extra 1/4 pound Special B for more caramel/raisin taste.
Can substitute Vanguard hops (Swiss) for bittering.
Also Vanguard Leaf for aroma, although not exactly true to this beer or style.
Saaz is also good in this beer.
