Grain: 11 lb. 8 oz. British pale
1 lb. 8 oz. American Munich
8 oz. American victory
1 lb. American crystal 60L
8 oz. American chocolate
1 lb. Flaked Wheat
8 oz. Flaked corn
1 lb. Rolled oats
Mash: 70% efficiency
batch sparge to make 14-15 gallons. Single infusion target 150-152 *F for 80 min.
Boil: 60 minutes SG 1.046 15 gallons
3 lb. Light malt extract
3 lb. Honey
1 Tbs Irish moss 15min
add 3 lb LME @ 15 min
add 3 lb Honey @ flame out
Late addition of LME and honey should improve hops utilization by about 5 points, to around 40 HBU
Cool wort and split into 2 fermenters
Hops: 1 oz. Galena (13% AA, 60 min.)
.5 oz. Galena (13% AA, 45 min.)
1 oz. Cascade (6% AA, 10 min.)
Yeast: Nottingham dry, rehydrate, proof and pitch 1-2 pkg per bucket. Or use 2 different types and note difference in flavor profile.
Log: 10-14 days primary
14 days minimum secondary
Carbonation: 2.8 volumes Corn Sugar: 5.80 oz. for 5.75 gallons @ 64°F
Bottle 2 buckets @ approx. 5.75 Gallons each
