Helen Kellerbier

Kellerbier is a German unfiltered lager. It is usually served on draft, slightly colder than room temperature.

Alcohol: 5.3% v/v (4.1% w/w)
Grain: 6 lb. German Pilsner
8 oz. American crystal 90L
1 lb. German Vienna
1 lb. German Munich
Mash: 80% efficiency
Step mash--mash in 122 rest for 15 mins, saccharification rest 150 degrees for 40 mins, mash out 170 degrees for 10 mins

Boil: 90 minutes SG 1.046 5.5 gallons
Hops: 1 oz. Hallertauer Mittelfruh (5% AA, 60 min.)
.25 oz. Saaz (3.75% AA, 60 min.)
.25 oz. Tettnanger (4.5% AA, 60 min.)
.5 oz. Hallertauer Mittelfruh (5% AA, 15 min.)
.5 oz. Saaz (3.75% AA, 15 min.)
.5 oz. Tettnanger (4.5% AA, 15 min.)
.25 oz. Saaz (aroma)
.25 oz. Tettnanger (aroma)
Yeast: Use a decent lager yeast, and you should get good results.
Log: Primary ferment at 50 degrees. Secondary at normal temp for 10 days. Lager at 35 degrees for 2 months.
