Das Bock

My first attempt at anything resembling Optimator, but backing off on the strength to make it easier to drink in warmer weather.

Type: Extract w/grain Size: 5.0 gallons
Color:
25 HCU (~14 SRM)
Bitterness: 13 IBU
OG: 1.072 FG: 1.020
Alcohol: 6.7% v/v (5.3% w/w)
Water: Reverse osmosis at my local Culligan store
Grain: 1 lb. Belgian aromatic
2 oz. American chocolate
Steep: 30 minute steep of grain
Boil: 50 minutes SG 1.144 2.5 gallons
9 lb. 5 oz. Light malt extract
Hops: 1.5 oz. Mt. Hood (4.5% AA, 60 min.)
0.5 oz. Mt. Hood (4.5% AA, 30 min.)
Yeast: WLP 833 from a two day starter
Log: Boiled up on 3/4/08, racked on 3/14/08, still in carboy. Will bottle in a few days.
Tasting: Based on Bock styles would increase bitterness and color somewhat, but happy with this first attempt. Maybe a little sweeter than anticipated. Also would like to add some toasted notes with some other specialty grains.
