Britt's Irish Red

This is a clone of Magic Hat's discontinued "Humble Patience"

Type: Extract w/grain Size: 5.5 gallons
Color:
68 HCU (~27 SRM)
Bitterness: 28 IBU
OG: 1.052 FG: 1.012
Alcohol: 5.2% v/v (4.1% w/w)
Water: 2 tsp 5.2 Mash Stabilizer for grain steep.
Grain: 8 oz. Dextrine malt (Cara-Pils)
8 oz. British crystal 70-80L
2 oz. British chocolate
4 oz. Roasted barley
Steep: Mash grains in 1.5 gal water at 150°F for 45 minutes. Sparge with 1 gal water at 185°F for 15 minutes.
Boil: 90 minutes SG 1.115 2.5 gallons
6 lb. Amber dry malt extract
Add 1 tsp Irish Moss for last fifteen minutes of boil.
Hops: 1 oz. Target (10.6% AA, 90 min.)
1 oz. Cascade (6.6% AA, 15 min.)
Yeast: White Labs Irish Ale (WLP004)
Carbonation: 1/3 cup priming sugar OR keg and force carbonate
