Arkangel Imperial Stout

Taking a second stab at an Imperial. First one I made used molasses, and I want to try and cut out the extreme sweetness.

Type: Extract w/grain Size: 5 gallons
Color:
240 HCU
Bitterness: 11 IBU
OG: 1.102 FG: 1.023
Alcohol: 10.2% v/v (8.0% w/w)
Water: Using High Bridge Spring Water from central KY. It's limestone water and should bring a slightly "rock" flavor to the bitterness.
Grain: 2 lb. American chocolate
8 oz. American black patent
Boil: 60 minutes SG 1.127 4 gallons
8 lb. Light malt extract
5 lb. Dark malt extract
1 tsp. Irish moss
6 oz. Maltodextrine
Hops: 1 oz. Fuggles (4.75% AA, 60 min.)
1 oz. Mt. Hood (4.5% AA, 15 min.)
Yeast: Wyeast 1272 - American Ale II
