Steve's Hoppy Brown Ale

60 HCU (~25 SRM)
Bitterness: 29 IBU
OG: 1.050 FG: 1.014
Alcohol: 4.7% v/v (3.7% w/w)
Grain: 675g British Munich
450g British crystal 70-80L
226g British chocolate
Steep: Bring slowly to boil in grain bag, bring to 70 C and hold for 60 mins, sparge with 3 liters of 70 C water.
Boil: 60 minutes SG 1.126 10 liters
1.5kg Light liquid unhopped malt extract
1.5kg Amber liquid unhopped malt extract
500g Light dry malt extract
Add liquid and dry extracts, boiling hops and boil for 60 mins adding addtional hops at 15 mins and aroma. Add half tablet of irish moss last 5 mins of boil.
Hops: 60g Perle (8% AA, 60 min.)
30g Styrian Goldings (5.5% AA, 15 min.)
30g Styrian Goldings (aroma)
Yeast: Safale S - 04 dry yeast and 5 grams yeast nutrient. pitched at 20 C
Carbonation: 5 ml or 1 level teaspoon of Brown Sugar.
Tasting: Tasted after 2 weeks in bottle, great taste, a little hoppy, will develop well over 2-3 months.
