Mash: 70% efficiency
Single infusion. 60 min saccrification rest at 154 deg. Mashed out 10 min at 165. Fly sparged to collect 6.5 gal.
Boil: 60 minutes SG 1.053 6.5 gallons
Irish moss 1 tspn at 15 min
Hops: .75 oz. Yakima Magnum (12.9% AA, 60 min.)
.5 oz. Yakima Magnum (12.9% AA, 15 min.)
1.5 oz. Challenger (6.5% AA, 3 min.)
.75 oz. Yakima Magnum (12.9% AA, 3 min.)
1 oz. Ahtanum (aroma)
3 oz. Willamette (Fresh) (aroma)
Yeast: Fermentis US-05 (2 packets). First 48 hrs fermented at 65 deg. Then held at 69 deg for 6 days prior to racking.
Carbonation: 2.5 vol.
