Water: Spring water with minor acidification at sparge
Grain: 6 lb. German Pilsner
24 lb. German Munich
1 lb. Belgian CaraVienne
2 oz. Carafa
4 oz. Melanoidin
Mash: 75% efficiency
Step mash. Low Sacchrification at 144F for 30 minutes - continual stirring. Raise to 156F for 60 minutes (high sacchrification). Mash out at 170F for 10 minutes. Sparge to collect 12 gallons.
Boil: 120 minutes SG 1.072 12 gallons
Hops: 2 oz. Brit (6% AA, 120 min.)
1 oz. Spalt (3.8% AA, 90 min.)
1 oz. Spalt (3.8% AA, 30 min.)
Yeast: WLP 833 with starter (to 1/2 gallon)
