Discount Cream Ale

Type: Partial mash Size: 5 gallons
Color:
7 HCU (~5 SRM)
Bitterness: 20 IBU
OG: 1.056 FG: 1.008
Alcohol: 6.2% v/v (4.8% w/w)
Water: 1 tsp gypsum (.5 in mash water, .5 in sparge water)
Grain: 3 lb. American 2-row
1.5 lb. German Munich
.25 lb. Dextrine malt (Cara-Pils)
1 lb. Flaked corn
Mash: 78% efficiency
Strike at 130F. Let sit at 122F for 20 min. (protein rest).

Add boiling water to raise temp to 138 sit 30 min

Add more boiling water to raise temp to 150F let sit 30 min.

Mash out at 167F
Boil: 60 minutes SG 1.093 3 gallons
3 lb. Light malt extract
1 tsp. Irish moss last 10 min.
Hops: 1 oz. Hallertauer (4.25% AA, 60 min.)
1 oz. Mt. Hood (4.5% AA, 60 min.)
.5 oz. Mt. Hood (aroma)
Yeast: White Labs Cream Ale Yeast Blend
Carbonation: 2.6 volumes Dried Malt Extract: 7.99 oz. for 5 gallons @ 67°F
