JT's Special Request Honey Ale

My friend JT wanted a high alcohol ale, this one turned out OK

Beer: JT's Special Request Honey Ale Style: American Amber Ale
Type: Extract w/grain Size: 5 gallons
Color:
9 HCU (~7 SRM)
Bitterness: 11 IBU
OG: 1.064 FG: 1.008
Alcohol: 7.2% v/v (5.7% w/w)
Water: Brita filtered tap water
Grain: 1 lb. American crystal 10L
Steep: Steeped grains for 30 minutes at 155°
Boil: 60 minutes SG 1.091 3.5 gallons
6 lb. Light malt extract
2 lb. Honey
added honey with 25 minutes remaining
added 1 teaspoon Irish moss with 15 minutes remaining
Hops: 1 oz. Fuggles (4.75% AA, 60 min.)
1 oz. Kent Goldings (aroma)
Yeast: 2 6 gram packets Munton’s dry ale yeast
Carbonation: primed with 3/4 cup honey
Tasting: this beer was much better after 6-7 weeks in the bottle. JT likes the alcohol kick.
