Faye's Kolsch

In honor of one classy lady on her birthday.

Type: All grain Size: 5 gallons
Color:
4 HCU (~4 SRM)
Bitterness: 26 IBU
OG: 1.048 FG: 1.008
Alcohol: 5.1% v/v (4.0% w/w)
Water: Low mineral content water best - this is important to get a round delicate flavor. For Savannah, I use 1/2 RO mix with tap.
Grain: 7 lb. German Pilsner
1 lb. Wheat malt
1 lb. German Munich
Mash: 70% efficiency
Single 150°F. Batch sparged 1.5 qts per lb, then added mash out water. Drained, added 3 gal of 170F water, mixed, 10 min., then drained again.
Boil: 60 minutes SG 1.040 6 gallons
IM @ 15
Hops: 17.0g Santiam (6.5% AA, 60 min.)
17.0g Santiam (6.5% AA, 30 min.)
Yeast: WLP029 German Ale. Very nice yeast. Dropped clearer than expected. FYI, Puts off lots of sulfur for first 2 weeks, though.
Log: Primaried at 64F for 3 weeks. Racked to keg for 3 weeks at 38F. Blew off remaining yeast and force carbbed.
Carbonation: Medium to med-high carbonation
Tasting: Extremely satisfying. Beautifully straw gold with great head. Low esters, bitterness approximately balanced (just to bitter side) with surprising toasty malt flavors from Munich. Slightly dry finish and very thirst quenching. Unfortunately I made this during the winter and would have been great as a summer lawnmower beer (but gone long before then). This one is easy drinking enough for all the B-M-C drinkers but has some nice flavor for "real" drinkers.
