Extra Special Bluedale Ale

First brew in 5 years... I found the recipe in my spreadsheet labeled "Next Brew", so why not? I had to change the hopping to reflect what was available today. I'll try to post back with results...

Bitterness: 30 IBU
OG: 1.045 FG: 1.010
Alcohol: 4.5% v/v (3.5% w/w)
Water: Added gypsum, epsom, and baking soda to mimic London water

9 oz. German Vienna
9 oz. German Munich
6 oz. American victory
12 oz. American crystal 10L
9 oz. American crystal 40L
6 oz. Flaked wheat
Mash: 72% efficiency
Sprinkled foundation water,3 gal at 110 degrees, over grist to achieve a peptonization rest at 95 for 30 min, while mash water reached temp. Single step mash with 4.5 gal at 180 for a rest temp of 154 for 60 min. Sparged with 9.5 gal, collected 13gal
Boil: 60 minutes SG 1.038 13 gallons
Irish moss @ 15min to go
Hops: 1.75 oz. Northern Brewer (6.9% AA, 60 min.)
.4 oz. Willamette (6% AA, 45 min.)
1.1 oz. Willamette (aroma)
Yeast: Wyeast 1968 London ESB
