Ruined Nation

A liquid clone of the liquid poem to the glory of the hop.

Beer: Ruined Nation Style: India Pale Ale
Type: Partial mash Size: 5 gallons
Color:
18 HCU (~11 SRM)
Bitterness: 126 IBU
OG: 1.074 FG: 1.014
Alcohol: 7.7% v/v (6.1% w/w)
Water: 1 Tbs 5.2 mash pH stabilizer, 1 tsp Gypsum
Grain: 3 lb. American 2-row
1 lb. American Munich
1 lb. American crystal 40L
1 lb. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
Mash grains 60 min at 152°F. Sparge as usual.
Boil: 60 minutes SG 1.062 6 gallons
6 lb. Light malt extract
60 minute boil, 1 tsp irish moss last 15 minutes
Hops: 2 oz. Magnum (13.1% AA, 60 min.)
.5 oz. Columbus (12.2% AA, 30 min.)
.5 oz. Cascade (6.3% AA, 30 min.)
.5 oz. Columbus (12.2% AA, 10 min.)
.5 oz. Cascade (6.3% AA, 10 min.)
Yeast: White Labs 001 in 1 liter starter
Log: Ferment 7 days at 68°F. Rack to secondary and add 1 oz Columbus and 1 oz Cascade dry hops for 5 days at 60°F. Rack to tertiary fermenter and refridgerate 5 days to allow solids to settle out. Rack to keg and force carbonate.
Carbonation: 2.3 volumes Keg: 10.1 psi @ 40°F
Force carbonate to 2.3 volumes.
Tasting: Stone uses Magnum and Centennial hops in their beer, but due to the (gasp!!) SHORTAGE... I came up with Magnum, Columbus and Cascade. I hope this ends soon.
