16 HCU (~10 SRM)
Bitterness: 60 IBU
OG: 1.061 FG: 1.010
Alcohol: 6.6% v/v (5.2% w/w)
Water: Lincoln, NE tap water
Grain: 11.5 lb. American 2-row
.75 lb. American victory
1 lb. American crystal 10L
.5 lb. British crystal 70-80L
Mash: 67% efficiency
Single infusion. Held 60 min at 155° Ratio of 1.8qts water/lb grain. (good when you want a lot of crystal malt flavor in your finished beer) Mashed out at 170° 10 min.
Boil: 60 minutes SG 1.061 5.5 gallons
1 tspn Irish moss 15 min.
Hops: 1.5 oz. Northern Brewer (7.7% AA, 60 min.)
1 oz. Cascade (6% AA, 5 min.)
.5 oz. Simcoe (11.6% AA, 5 min.)
.5 oz. Cascade (aroma)
.5 oz. Simcoe (aroma)
Yeast: White labs California ale. Pitched with a 1 qt starter made 3 days prior.
Log: Held in primary fermenter for 4 weeks. NO SECONDARY. After 1st week, I added a pre-boiled muslin bag containing the .5 oz Simcoe and .5 oz cascade.
Carbonation: 2.6 volumes co2. I know this is a bit more than recommended for an IPA, but I like a little more co2 in my hoppy beers (really makes the aroma come out)
Tasting: Great all around IPA. Careful, the 6.6%/vol will sneak up on you! I may try using a bit more victory malt and a bit less light crystal next time I make this recipe.
