Bitterness: 25 IBU
OG: 1.054 FG: 1.010
Alcohol: 5.7% v/v (4.5% w/w)
Water: Add 1 Teaaspoon Gypsum or use spring water.
Grain: .5 lb. American Vienna
.5 lb. American crystal 20L
.5 lb. Dextrine malt (Cara-Pils)
.5 lb. American 2-row
Steep: Bring grains to 154°. Steep 60-75 minutes.
Remove grains.
Boil: 60 minutes SG 1.092 3.25 gallons
3.3 lb. Light malt extract
3 lb. Light dry malt extract
Add 1 Teaspoon Irish Moss when 15 minutes
remain with boil.
Hops: .5 oz. Perle (7.9% AA, 60 min.)
.5 oz. Glacier/Cascade (6.1% AA, 45 min.)
.5 oz. Perle (7.9% AA, 30 min.)
.25 oz. Glacier/Cascade (6.1% AA, 15 min.)
.25 oz. Glacier/Cascade (aroma)
Yeast: White labs 'East Coast Ale' yeast or
Wyeast 1056 (Chico) Yeast
Log: Ferment @ 68°. Primary 1 week,
secondary 1 week.
Carbonation: 3/4 cup corn sugar
