Type: All grain Size: 5.25 gallons
Color:
123 HCU (~40 SRM)
Bitterness: 23 IBU
OG: 1.075 FG: 1.010
Alcohol: 8.3% v/v (6.5% w/w)
Water: 5.2 Mash Stabilizer to regular ol' Monroe Co. tap water
Grain: 10 lb. American 2-row
.5 lb. Belgian aromatic
1 lb. British crystal 50-60L
.5 lb. British chocolate
.5 lb. British black patent
Mash: 60% efficiency
Single infusion mash at 155° for 60 minutes. Sparge slowly (45-60 minutes) with 175° water
Boil: 60 minutes SG 1.065 6.02 gallons
3 lb. Oregon Cherry Puree
Cherry puree is listed as boil ingredient. This should not be added until the secondary fermentation stage (and don't boil it, it's already sanitized in the can!)
Hops: 1 oz. Willamette (4.5% AA, 60 min.)
1 oz. Willamette (4.5% AA, 30 min.)
1 oz. Willamette (aroma)
Yeast: WYeast 1728 in 2 quart starter

Carbonation: 2/3 to 3/4 cup of corn sugar, depending on your tastes for the style
