Doggie Claws

Hair of the Dog Doggie Claws. Recipe from brew-monkey.com
Tried to approximate as closely as possible the method
quoted in the article, and used quotations where taken directly
from the article. Had to guess on efficiency. IBU's looked
ridiculously high (>200) so I lowered the boil volume to only 6
gallons to get closer to the quoted 70 IBU.

Beer: Doggie Claws Style: Barley Wine
Type: All grain Size: 10 gallons
Color:
32 HCU (~16 SRM)
Bitterness: 81 IBU
OG: 1.113 FG: 1.022
Alcohol: 11.7% v/v (9.2% w/w)
Water: "I go with the local water source." (Portland, OR)
Grain: 55 lb. Gambrinus Pale
5 lb. British crystal 45L
Mash: 45% efficiency
Mash at "154°F-156°F" for "about 30 mins," "single step infusion."
Boil: 120 minutes SG 1.188 6 gallons
3 lb. 4 oz. Honey (1/4 gallon)
Boil sweet wort for 4 hours, then start adding hops.
"30 min before end of boil add 1/4 gal Honey."
Hops: 6 oz. Simcoe (13% AA, 120 min.)
4.5 oz. Simcoe (13% AA, 60 min.)
6 oz. Amarillo (9% AA, 10 min.)
3 oz. Simcoe (aroma)
3 oz. Amarillo (aroma)
Yeast: Wyeast 1728, use a large volume ("about 3 times what
you would use for normal gravity beer") starter
for fermentation. Ferment at 70°F for "3-4 days."
Log: Dry hop for aroma with hop pellets (3oz Simcoe, 3oz Amarillo)
Carbonation: Bottle and condition for 2 weeks. Improves with age.
Tasting: I have not brewed this beer yet, but the real thing is great.
Love the hop profile, lots of aroma and bitterness.
