7041 - Czech Budvar

Beer: 7041 - Czech Budvar Style: Bohemian Pilsener
Type: Extract w/grain Size: 5.25 gallons
Color:
6 HCU (~5 SRM)
Bitterness: 8 IBU
OG: 1.041 FG: 1.007
Alcohol: 4.4% v/v (3.5% w/w)
Water: I placed 4 gals of PUR filtered tap water in the freezer for 4-5 hours prior to brewing.
Grain: 1 lb. British Pale Malt
Steep: Crush and steep 1 lb Pale Malt in 3/4 gal water ! 170F for 30 mins. Sparge water was the same.
Boil: 60 minutes SG 1.145 1.5 gallons
4 lb. 8 oz. Extra Light DME
2 tsp Irish Moss (rehydrated)
Hops: 1.1 oz. Saaz (3.4% AA, 60 min.)
.5 oz. Saaz (3.0% AA, 60 min.)
Yeast: Starter was made with 2 vials of (WASHED) WLP802 Czech Bud (last used 3/07). Lag time was under 3 hours.

Brought steeped wort to a boil.

Added:

1 lb XLDME
1.1 oz Saaz whole hops @ 3.4%AA
.5 oz Saaz hop pellets @3.0% AA

Boil 30 mins.

Add Irish Moss. Boil 15 mins.

Remove from heat. Add 3.5 lbs XLDME and dissolve. Steep for 15 mins.

Sparge into primary. Top off to 5.25 gals and stir.

OG: 1.045 (11)
FG: 1.006

Sample tasted both sweet and bitter as it should.

Pitch yeast.

18 Nov 07: Fermenting away. I allow the ferment to begin at pitching/room temps for about 24 hours then place the fermenter in the cold. Placed primary in the cold garage.

10 Dec 07: Temp: 41F / Gravity: 1.010. Tastes great cold. Slight citrus flavor from the hops. Slight sulfur flavor from the yeast.. Cloudy. Nice body and balance. Brew another batch soon.

16 Dec 07: Temp 68F / Gravity: 1.007. A little musty flavored. Slight sulfur lingers. Rack to the secondary and cover with a shirt. Move to the cold garage. Brew next batch with new yeast. Vodka placed in the airlock.

21 Dec 07: Temp: 64F /Gravity: 1.008. Same notes as above. I was thinking the off flavors are due to the steeping. Maybe 170F is too high? Still in the garage.

3 Jan 08: Brought in from the cold. Temps going down to 0. Airlocks froze in the other lagers.

6 Jan 08: Temp: 70 /Gravity: 1.006 + 1 = 1.007. This brew is very clear and not filtered. Very nice medium body and balance. Good flavor. Lots of malt. this one is ready for drinking. but should be lagered longer. Place it back into the cold garage. Brew this one again and DO NOT change anything, except for the new yeast.
