Alcohol: 4.6% v/v (3.6% w/w)
Water: I have high carbonate water which I offset by using gypsum. No water treatment necessary for low carbonate waters.
Grain: 4 lb. American 2-row
9 lb. American Vienna
1.25 lb. Belgian Special B
.75 lb. British crystal 70-80L
1 lb. Rolled oats
Mash: 85% efficiency
Single infusion at 153.
Boil: minutes SG 1.040 13 gallons
1 lb. Brown sugar
Add the sugar at the end of the boil to retain its character in the finished beer. I like the unrefined South and Central American sugars, but grocery store brown sugar is good, too.
Hops: 1.5 oz. Willamette (5% AA, 60 min.)
.5 oz. Willamette (5% AA, 15 min.)
Yeast: Nothing wacky. I usually go with SafAle or Nottingham dried yeasts.
