6 HCU (~5 SRM)
Bitterness: 21 IBU
OG: 1.061 FG: 1.015
Alcohol: 5.9% v/v (4.6% w/w)
Water: use spring water and one tsp gypsom per 5 gal.for ph.
Grain: 10 lb. American 2-row
1 lb. American crystal 10L
Mash: 75% efficiency
heat mash water to 168 and add cracked grain and stir well to obtain mash temp of 152 degrees f hold for one hour raise mash to 168 for 5 min to mash out,begin recirculation till wort clears and begin runoff. sparge with 170 degree water to rinse grains of sugars untill boil volume is 6.5 gal.
Boil: 90 minutes SG 1.047 6.5 gallons
boil wort for 30 min then add bittering hops [only one hop addition] add 1 tsp of irish moss with 15 min remaining in boil.cool wort to 67 degrees w/wort chiller or drop pot in sink w/cold water
Hops: 1.2 oz. Willamette (5% AA, 60 min.)
Yeast: used 1 11.5 gram safeale us05 dry yeast, was first time i used dry yeast and pitched directly into cooled wort and worked fine.
Log: ferment at 67 degrees for 1 week rack to secondary fermentor for 1 week
Carbonation: add 3/4 cup of brewers sugar to 1 cup of boiling water cool and add to bottling bucket rack wort to bottling bucket and bottle. let carbonate for 2 weeks and age additional 2-4 weeks. chill and enjoy.
