Bitterness: 31 IBU
OG: 1.066 FG: 1.013
Alcohol: 6.9% v/v (5.4% w/w)
Water: Filtered water from New Seasons. Add pinch of gypsum.
Grain: 11 lb. Gambrinius pale
1.0 lb. 8 oz. American crystal 60L
4 oz. American chocolate light
1 lb. Belgian CaraMunich
Mash: 65% efficiency
Mash at 154° F for 60 minutes. Single infusuion in Rubbermaid mash tun.
Boil: 60 minutes SG 1.053 6.3 gallons
Irish moss at 15 min.
Hops: .8 oz. Northern Brewer (8.5% AA, 45 min.)
1.0 oz. Cascade (6% AA, 15 min.)
Yeast: Wyeast 1056 yeast cake from previous batch of stout.
Log: Brewed 11/15/07 8 days primary @ 60-62° 15 days secondary @ 60°
Bottled on 12/07/07
Carbonation: Primed with 3/4 cup corn sugar.
Tasting: gonna be good. very alcoholic at bottling...I think my efficiency may be higher than expected with new false bottom in my tun.
