Joe's Ale

This is my first beer. I named it after my father because Bass Ale is his favorite beer and this was an English Pale Ale.

Type: Extract w/grain Size: 5 gallons
Color:
13 HCU (~9 SRM)
Bitterness: 32 IBU
OG: 1.044 FG: 1.011
Alcohol: 4.2% v/v (3.3% w/w)
Grain: .5 lb. American crystal 60L
Steep: After filling the brew pot with water and turing on the stove put the grain in the steeping sack and put in pot until water reaches 190°F or about 30 mins occasinally diping and dunking it and swirling it around in the pot.
Boil: 60 minutes SG 1.073 3 gallons
3.31 lb. Light malt extract
2 lb. Light dry malt extract
After removing grains remove brew pot from heat and mix in LME and DME. Put back on heat and bring to a boil. After hot break add bitering hops. Boil for 50 mins then add aroma hops boil for another 10 mins. after 60 mins total. Remove from heat in chill in ice bath or with wort chiller to 70°F. Pitch yeast seal lid and areate.
Hops: 1 oz. Perle (7.2% AA, 60 min.)
1.5 oz. Willamette (5.7% AA, 10 min.)
Yeast: The yeast I first pitched was dead so after 2 days of no activity I bought and pitched another packet of yeast. The first packet was Nottingham by Danstar the second was S-04 by Safale. Both were rehydrated dry yeast.
Log: Brewed on 11/08/2007. Allowed to ferment at 67°-72°F for 2 weeks in the primary fermentor.
Bottled on 11/24/07
Carbonation: 2.3 volumes Corn Sugar: 4.00 oz. for 5 gallons @ 70°F
Mixed 4oz of corn sugar into 1.75 cups of boiling water. Put the sugar water into priming bucket and racket beer to bucket letting swirling action mix beer and sugar. Bottled and capped let bottle condition for 2 weeks.
Tasting: I was pleasently suprised at my first brew. It was very good. It has a nice head and an almost sweetness to it. the hops and malt are balanced well. Is a little to dark though. Also a little cloudy, perhaps I will use a fining agent next time. My father is sure to like this beer. Overall a 8.5 out of 10.
