Alcohol: 4.6% v/v (3.6% w/w)
Water: London tap water.
Grain: 4.5kg British pale
0.5kg Belgian CaraMunch
0.5kg British crystal 70-80L
Mash: 68% efficiency
Strike with 16 litres at 78c to give 66C mash temp. Leave for 90 mins
before sparging twice, each with 9 litres at 78C.
Boil: 75 minutes SG 1.043 28 liters
100g Brown sugar
1 tsp Irish Moss for last 15 mins. At end of boil cooled wort to 40C
in 15mins.
Hops: 55g Bramling Cross (5.8% AA, 75 min.)
35g Styrian Goldings (3.8% AA, 15 min.)
10g Styrian Goldings (aroma)
Yeast: Gervin English Ale Yeast, started in sugar solution and added to wort
after cooling.
Carbonation: 2.2 volumes Corn Sugar: 135g for 25 liters @ 20°C
