Slummy Stout

Named for Cap'n Jack's infamous Slummy (Slumgullion) Knot, this stout should be a smooth, smokey, chocolatey treat.

Type: Extract w/grain Size: 5 gallons
Color:
156 HCU (~48 SRM)
Bitterness: 52 IBU
OG: 1.058 FG: 1.008
Alcohol: 6.4% v/v (5.1% w/w)
Water: Straight (via a whole lot of pipes and a treatment facility) from the Schuylkill. Heated to boiling, then cooled to 150F for steep.
Grain: 1 lb. British crystal 50-60L
14 oz. British chocolate
8 oz. British black patent
Steep: Hold @ 150F for 1/2 hour, 2 small teabags for ease of handling. Squeeze and rinse back into boil pot.
Boil: 60 minutes SG 1.097 3 gallons
6.6 lb. Light malt extract
8 oz. Brown sugar
Hops: 2 oz. Cascade (6% AA, 60 min.)
.5 oz. Chinook (12% AA, 45 min.)
.5 oz. Cascade (6% AA, 30 min.)
.5 oz. Fuggles (4.75% AA, 30 min.)
.5 oz. Fuggles (4.75% AA, 15 min.)
1 oz. Fuggles (aroma)
Yeast: 2 packets Fermentis Safbrew S-33. Started in ziploc w/some warm water and tbsp brown sugar.
Carbonation: Soda keg.
