Pumpkin Ale

Hoping this will be ready by Halloween. Brewed today (10/6/07)

10 HCU (~7 SRM)
Bitterness: 12 IBU
OG: 1.052 FG: 1.011
Alcohol: 5.2% v/v (4.1% w/w)
Water: Meijer Spring Water
Grain: 8 oz. American crystal 10L
8 oz. Dextrine malt (Cara-Pils)
Steep: 2 Gal water, steep all Carapils and Caramel 10L at 155 deg for 30 minutes
Boil: 60 minutes SG 1.086 3 gallons
6 lb. Light malt extract
8 oz. Brown sugar
3 lbs Gold LME - 60 minutes
1c Brown Sugar - 60 minutes
1 oz Mt. Hood - 60 minutes
28 oz canned pumpkin put in nylon bag - last 20 min of boil
Remaining 3 lbs Gold LME - last 20 min of boil
1 oz Cascade hops - last 5 min of boil
1/2 tsp cinnamon, 1/2 tsp nutmeg - last 2 min of boil
Hops: 1 oz. Mt. Hood (4.5% AA, 60 min.)
1 oz. Cascade (6% AA, 2 min.)
Yeast: Wyeast American Ale #1056
Log: Primary 5-7 days
Rack to glass secondary - 7 days
Carbonation: Keg at 11-12 psi for 1 week
Tasting: Tasted before transfer to primary. Nice pumpkin and pumpkin spice taste, not too strong; Slight hop bite.
