Flathead IPA

Brewed with Schuylkill water, seemed appropriate to name it after some fine fightin Schuylkill fish!

Type: Extract w/grain Size: 5 gallons
Color:
29 HCU (~15 SRM)
Bitterness: 60 IBU
OG: 1.059 FG: 1.014
Alcohol: 5.8% v/v (4.6% w/w)
Water: Heat to ~200 and then let sit (no lid) till 150, then start steep.
Grain: 2 lb. American crystal 20L
2 oz. British chocolate
Steep: Cheesecloth ... 2x small ones make it easier to handle the rinse. Steep @ 150F for 1/2 hr. Occasional squeeze with tongs (I can't help myself). Siphon off a gallon, siphon it back over one teabag for rinse (dispose of 1st teabag). Siphon another gallon, siphon back in for other teabag (dispose).
Boil: 60 minutes SG 1.099 3 gallons
6.6 lb. Light malt extract
8 oz. Brown sugar
Love.
Hops: 2 oz. Cascade (6% AA, 60 min.)
1 oz. Cascade (6% AA, 45 min.)
.5 oz. Cascade (6% AA, 30 min.)
.5 oz. Chinook (11.5% AA, 30 min.)
.5 oz. Chinook (11.5% AA, 15 min.)
.5 oz. Chinook (aroma)
Yeast: 2 packets Fermentis Safbrew S-33. Started in ziploc w/some warm water and tbsp brown sugar.
Carbonation: Will soda keg.
