Scarborough Faire Ale

I'd heard about Gruit Ales made with no hops. I was thinking of how to make one when the song "Scarborough Faire" came on, so I decided to do that.

Beer: Scarborough Faire Ale Style: 21A. Spice, Herb, or Vegetable Beer
Type: Extract Size: 5 gallons
Color:
7 HCU (~6 SRM)
Bitterness: 0 IBU
OG: 1.041 FG: 1.018
Alcohol: 2.9% v/v (2.3% w/w)
Water: Regular water from the dug well. Kinda hard, I guess.
Boil: 60 minutes SG 1.031 6.5 gallons
6 lb. Light malt extract
One ounce each of Parsley, Sage, Rosemary, and Thyme.
Hops:
Yeast: SafAle S-04 Dry English Ale Yeast
Log: I boiled the extract with water for 30 minutes before adding the herbs. I guess I didn't have to, but it turned out good.
Carbonation: 2.8 volumes Corn Sugar: 5.13 oz. for 5 gallons @ 66°F
Tasting: The Parsley & Thyme really add nothing to the taste that I can tell. At bottling time the sage was just about overpowering, but it has mellowed very nicely over time. After about 3 weeks the rosemary is showing through as well. Just a really good, flavorful ale.
