Water: 1T of gypsum--Tap
Grain: 6 lb. American 2-row
2 lb. American Vienna
1 lb. American crystal 20L
1 lb. Dextrine malt (Cara-Pils)
1 lb. Belgian CaraVienne
8 oz. Flaked barley
Mash: 68% efficiency
Mash in @ 150° for 60 Min. Sparge at 170°
Boil: 90 minutes SG 1.040 7.0 gallons
Irish moss @ 15 min. to go in the boil
Hops: .5 oz. Cascade (6% AA, 60 min.)
.75 oz. Cascade (6% AA, 30 min.)
1 oz. Cascade (6% AA, 10 min.)
2 oz. Cascade (6% AA, 1 min.)
3 oz. Cascade (aroma)
Yeast: WLP051 California Ale V Yeast
From Northern California. This strain is more fruity than WLP001, and slightly more flocculent. Attenuation is lower, resulting in a fuller bodied beer than with WLP001.
Attenuation: 70-75%
Flocculation: Medium to High
Optimum Fermentation Temperature: 66-70°F
Alcohol Tolerance: Medium-High
Carbonation: 2.4 volumes Corn Sugar: 2.89 oz. for 5.0 gallons @ 45°F
