We used the WLP810 because we had it on hand and we like to get the most out of our yeast.

Alcohol: 5.7% v/v (4.5% w/w)
Water: Well water from my tap. very well balenced hardness
Grain: 20 lb. American 2-row
2 lb. American crystal 60L
2 lb. Dextrine malt (Cara-Pils)
1 lb. American chocolate
1 lb. Roasted barley
Mash: 65% efficiency
Single infusion mash for 60 min. @ 154°-156°
Boil: 60 minutes SG 1.053 11.5 gallons
Irish Moss
Hops: 1.5 oz. Cascade (6% AA, 60 min.)
.5 oz. Fuggles (4.75% AA, 30 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Fuggles (4.75% AA, 15 min.)
Yeast: WLP810 San Fransico style lager yeast
