In honor of the King Charles the IV of the Holy Roman Empire (http://www.czech.cz/en/czech-republic/history/all-about-czech-history/the-luxemburgs-and-king-charles-iv/). This pils will certainly satisfy your need for a very good pils. The Moravian barley makes the difference, can be a little hard to find. Gotta have it for a TRUE Bohemian Pils!

Bitterness: 45 IBU
OG: 1.059 FG: 1.016
Alcohol: 5.5% v/v (4.4% w/w)
Water: Tap Water
Grain: 10 lb. 8 oz. Prime-2 Row Moravian Pils malt
1 lb. Dextrine malt (Cara-Pils)
Mash: 70% efficiency
Grain is well-modified so single infusion is fine, mash in @ 150 ° for 60 min. sparge @ 170 °
Boil: 60 minutes SG 1.045 6.5 gallons
Irish Moss @ 15 min. to go in the boil
Hops: 1.0 oz. Saaz (3.75% AA, 60 min.)
1.0 oz. Saaz (3.75% AA, 40 min.)
.5 oz. Saaz (3.75% AA, 30 min.)
1.5 oz. Saaz (3.75% AA, 15 min.)
Yeast: WLP802 Czech Budejovice Lager Yeast
Pilsner lager yeast from Southern Czech Republic. Produces dry and crisp lagers, with low diacetyl production.
Attenuation: 75-80%
Flocculation: Medium
Optimum Fermentation Temperature: 50-55°F
Alcohol Tolerance: Medium
Carbonation: 2.4 volumes Keg: 9.2 psi @ 36°F
