Kadipa's Wheat Dopplebock (High Gravity)

This is an Aventinus Wheat Dopplebock Clone.

Alcohol: 12.6% v/v (9.9% w/w)
Water: In-line refrigerator water filter.
Grain: 5 lb. American 2-row
8.5 lb. Wheat malt
4 oz. German Vienna
1 lb. 8 oz. German Munich
9 oz. American crystal 40L
2 oz. British chocolate
1 lb. 8 oz. American crystal 10L
Mash: 80% efficiency
Steep crushed grain at 150 for 20 Minutes. Sparge grains to maximum efficacy. Boil for 45 minutes, then add 1/2 oz flavoring hops (Hallertau Hersbrucker) and 1 tsp Irish Moss. Boil 15 min and cool for 15. Add cold water to bring volume to 5 gallons. Pitch yeast at 80 degrees F.
Boil: 45 minutes SG 1.094 6 gallons
1 lb. 4 oz. Wheat extract
1 tsp - Irish Moss
Hops: .75 oz. Hallertauer Hersbrucker (5% AA, 45 min.)
.25 oz. Hallertauer Hersbrucker (5% AA, 45 min.)
Yeast: Wyeast 3333 German wheat yeast or 3056 Bavarian wheat yeast. Primary fermentation @ 68 - 72 degrees 5 - 7 days.
Carbonation: Rack to secondary until sediment settles. Pitch 1.25 cups of M & F wheat DME for carbonation and bottle.
